Tried the Ethiopian coffee I would give Cupping Score , 85 max , the barista verified its 84. I would overall rate my experience of the coffee itself as 3 5 but due to the unique aspect of expertise I would give it a 4 5. Milk is typical Parisian long life which significantly reduces the experience of a milk based coffee to an over-sweet sour imbalance However this is based on my raw experience of the coffee and the milk . The selection of the coffee , roasting method and Barista expertise have managed to extract an exotic fruit back-note element to my experience. This was positivity surprising as I would expect to experience these notes on a higher scored Ethiopian, though I must say that it was only a back-note, it is not a significant expression to the pallet , it does not ‘wow’ , but it indeed surprises! I would take a coffee expert here to show how it’s possible to utilize an average coffee to the highest level and for this I give it to them !
