Ah I hate to do this but as one of our most hyped restaurants on our list we felt our meal lacked complexity. We sat at the counter top which we couldn’t recommend more. It was amazing watching the chefs prepare the food. Each plate comes out looking absolutely beautiful however I just felt as though each dish we ordered was one dimensional and lacked the depth of flavor one would expect from a restaurant like this. The standout to us was the spicy beef salad. The arctic char crudo was good but a smaller portion than the tuna which is confusing as the cost of tuna is much higher. The beets and carrots were fine, but nothing special. The suckling pig was overwhelmingly sweet and the Marcona almonds in the dish didn’t add anything for us. With bone marrow toast we are used to scooping the bone marrow out ourselves but here the toast already comes with the bone marrow on it. We thought that was interesting and not worth $20. Lastly the kimchi was clearly made incorrectly, we think the leaves were not rinsed after being salted. As someone who makes kimchi I could tell it was just made wrong. If you want to give this place a shot I highly recommend sitting at the counter and starting with a few raw dishes! Go for the tuna crudo and oysters the oysters looked amazing).
