Almandin is the restaurant of hotel l'Île de la Lagoon, a modern-style very elegant hotel/spa; good as the hotel is, the restaurant is better; and our favourite is the regular series of dinners, le Table d'Honneur; the recent change of chef has not diminished the quality, nor the imaginative approach, the local wines are invariably well-chosen and complement the food perfectly; before the meal, it is common to take a glass - outside if fine, in the bar if not; I am always happy with their Henriot champagne, my wife likes their huge range of cocktails; the food is different every time, but nonetheless revolves around local produce; the latest began with a small glass of cucumber soup, raised to another level by tiny mint ice cubes; the first real course was a simple, but perfect, dish, an oyster with cucumber jelly, accompanied by champagne; next came a langoustine, with the hearts of beef tomatoes, plus Catalan white wine; my favourite was a perfect pair of fillets of roast sea bass, with a razor clam and a clam nage, plus a choice of the same white wine or a delicious Mas Karolina red; a delicate roast mignon of veal with peaches liked the same wine; a light blend of mascarpone and delicious rhubarb took a local sweet white; finally, a delightful bit of fun, involving chocolate, caramel, pineapple sorbet, went beautifully with a rich and unctuous 2008 white Maury, also from Karolina; a magnificent, but not over-heavy, meal; as a minor note, the cabaret singer was a joy to listen to
