My sister and I were guests of the restaurant party today, Sunday, July 23, 2017, at noon. The fact that you can have almost all the dishes (almost of course desserts) in serving-entrance or flat-principal portion of choice, is really very pleasant. Their restaurant does not lack pleasant surprises: as an aperitif, we have my sister and I, taken the gentian syrup (counting a hundred large roots for a litre of concentrated syrup.) announced by the manager as amer, however, this syrup developed pleasant flavors after a while, once in the mouth. My sister took the raw pole nets, and offered me to taste some of them; I haven’t eaten a net of perch in the other restaurants for fifteen years, because the fried perch nets (when they weren’t squarely re-frits), I couldn’t (black in the stomach). But the raw perch nets of L’Auberge à baulmes are “it’s simply” a miracle. While the fried perch nets that I had tasted elsewhere were insipid, the raw perch nets of the Auberge à baulmes are unrelated: a truly fresh taste and a "pounting"! -For dessert, my sister did not resist the tasting, (so a assortment.) I let myself try to taste a piece of his cake with the water, because I really like the syrup of this plant, very moisturizing. and there again, a little like the aperitif (gentian sirop), a pleasant surprise of tastes that develop after a few moments, in the mouth. My sister took a light wine as a drink, that the manager was able to advise her without difficulty, and that my sister did not regret the least of the world.As for me, I let myself try, in the entrance, by their velvety of tomatoes to the clover. It was really amazing, because on the surface of the velvety, it was therefore a slap leaves, not nails, but these leaves had a very pronounced taste. In the main course, I was more “classical” than my sister; I was tempted by a slice of ox cooking "save", but in Japanese, accompanied by zucchini of two varieties with green beans, as well as potatoes, which I think were cooked with steam, then very slightly grilled with the stove. The bleeding beef was a slight resistance to mastication before it was gently absorbed, as it was appreciated by a good cooked meat in an optimal way (a bit seized.) it seems to me that once the meat had been grilled on a very hot but just a few moments, to deliver great aromas before entering the mouth (which was very successful). In dessert, I took verbena peaches. In drink, I had asked for a tannic wine; the manager had advised me a grenache: nose with character, dress well violet, and pronounced aromas, as I love so much when I drink a drink. As a common drink, we had a very discreet bottled water (exit paper labels), which the plant used according to the writing to the back (which is very well in these times of promotion of ecology) but yet with impeccable cleanliness. Without a bubble, however, this water avoided “heavy in the stomach”. Note that we have benefited from a “pre-entrance” (“amuse-bouche”), including pretty hemispheres of watermelon. Also, my sister did not want to enter (when I succumbed for the velvety at this stage,) they brought my sister a new amuse-bouche, It was really a great attention; All the good tables don’t always work so! Finally, we took a coffee, roasted in the village of baulmes - so to speak on site - that was kindly offered to us.-In conclusion, I’ll say (to the future sign) that even if I’ve ever had to go to a restaurant like that of the beautiful river palace (five stars) about once a year, I’ve never eaten well their kitchen surprises and at the same time will please everyone.-Seven small flats:-the slice of beef, planned with ginger, wasabi, and soy sauce, was served with soy sauce, but I did not notice wasabi, nor ginger. I hesitated to make a small claim, just for the next customer, to the manager, who often took care of the comfort of his clients here and there. But, very pleasantly surprised by the aromas of meat, I thought it was really a pity to "worm" or to hide those perfumes, with wasabi.-my sister had asked for an espresso, and I a normal coffee, but two espressos were served. Again, I did not make a claim for zero decimal five additional decimal place. -the services of my sister, for the dessert, were served with two or three drops of water at the end of the sleeve because they had just been washed, but the “useful” part of these services, the one that would be in contact with the food, was absolutely clean. - I also did not notice the verveine in the fisheries, and which last had been slightly cooked (which had, from my memory, not been specified on the map, but which was not unpleasant). I consider that even put together, these little “flats” do not even justify the removal of half a point, because they were details, compared to all the above, as well as the reception at the same time very correct and sympatheticly casual. the most: all that preceded the “flats” and the paragraph that followed. furniture is not left behind. very beautiful design "Icaro". The chairs seem to be of a simplified design but are very comfortable (I didn’t even have to change position in two or three hours), and are very robust (they are not close to grinding when you sit on it.) (I put a space to make this human aspect more obvious as important as the culinary aspect): when the cook was cooked out the herbs in their tray to make it as important as the culinary aspect) She thanked me with a great sincere smile. Really, I think that’s what distinguishes this establishment and many things depend on: employees are happy to work there. It is not “just” a pride as in other large tables. They are really happy about it, and I think that’s what makes this establishment so different.

Another privileged moment and out of time under the venerable plane tree that sits in the centre of the small square in front of the hostel of baths ... we were conquered once again by a tasty and creative cuisine that puts on the quality and local products, all accompanied by vintages that book pretty surprises! The welcome is always as kind and thoughtful! what more to say about this heart-catching address that for years has been feasting our taste buds with the same constance and pleasure ...?! Thank you for all these gourmet moments!

we had reserved for 7pm but arrived early so we found ourselves "closed outside." but we were warmly welcomed! very good address to really recommend. special mention for menus to be composed by yourself (equipped with all dishes are available in the entry or flat version), for tasting all their desserts and especially for the sympathy and accessibility of the eggplants!

a perfect welcome, unrelenting attention throughout the evening and the most important of the delicious dishes, of a quality and finesse that I would recommend to anyone. You can clearly see that these people like what they do and it feels, it feels and it gets swell. Thank you for this great evening.
