We discovered Le Belvedere in Bozouls by chance, as a result of wondering what the Trou de Bozouls might be. This in itself is well worth a considerable detour, one of the natural wonders of the world. Anyway, the food ambience and welcome of the restaurant knocked our socks off. Since then, we have been back pretty much every year and have never been disappointed. The cooking is extremely accurate and extraordinarily well-judged, and of its type I would say among the best I have tasted anywhere in the world. We go for lunch, where there is a simple menu with no choice, but many courses - and even with wine, aperitifs and coffee cost less than 50 euros per person. Don't go if you want to choose. Don't expect hearty portions of peasant food. On our last visit, the meat was mainly fish - pollock and cod - and was delicious. Lots of very lightly but perfectly cooked vegetables, with occasional flashes of herby flavours.The welcome is flawless, and service extremely pleasant and efficient. The dining room has a lovely feeling of space and light. Large parties need advance booking so that the tables can be properly arranged; this is not a sardiney place. (Though we have had delicious sardines here as part of amuse-bouches).Altogether, in my opinion, one of the great restaurants of the world, and fortunately for us, little known!
