The MOSAIC restaurant is located on the second floor of the Hyatt Regency Hotel. (information found on vaneats.ca The beautiful space is a perfect setting for a dinner. This is not part of the package, but they served us warm cheddar-rosemary biscuits. Earth Apple Farms Mixed Kale , radishes, garlic scape dressing. The dressing was light, refreshing and tasty. White Asparagus Bisque , parmesan lavash. This warm, thick soup is perfectly complimented with the crunchiness and saltiness from the parmesan lavash.

I am not sure what all the hype is about. The food for us was mediocre. We had lunch here. We left not satisfied. The restaurant itself is beautiful with high ceilings and a view. The service was solid but that's to be expected at Hyatt. Having eaten at Hyatt restaurants around The globe this food was the worst of the bunch. I would like to try the seasonal dinner menu before final judgement. Apps were ok. Salmon was over cooked and bun was soggy. It’s Spring time and slowly going into the Summer season. With the amazing weather we are having in Vancouver, I needed a chance to catch up with Wongers and enjoy the new menu from Mosaic. Their menu constantly changes and I don’t think I’ve never seen a restaurant so dedicated to fresh produce than these guys. You can probably come back in a few months and the menu will be revamped again. With the amazing Chef Jo Ong, she really makes this happen to create their signature items on the menu that are in season.

This restaurant is located in the Hyatt Regency Hotel on the second floor and should not be confused with the Grain Bar downstairs in the lobby. <br/ <br/ We enjoyed a relaxing dine in experience, overlooking the hustle and bustle of Burrard Street.<br/ <br/ The menu is varied with a good selection of West Coast fare. There will certainly be something on the menu that will be to your taste. <br/ <br/ The service is exemplary all around warm, friendly and attentive when needed.

Mosaic Grille at the Hyatt Regency Hotel is a destination for modern casual dining in the heart of Downtown Vancouver.  Their seasonally-inspired contemporary menu features locally sourced produce, sustainable seafood and fresh ingredients.  I had the opportunity to try their winter season dinner features.  Here’s a look at the delicious creations by the Mosaic Grill team.
