I am so beyond impressed with Proof. The first time my husband and I went was the best restaurant experience we have ever had. The staff greeted us upon arrival and we got a table right away with no reservations. I know that's probably unusual so we always make them now but as new parents on our first night out on a Sat, we were very pleased. Our server came to our table promptly and offered us drinks before telling us the specials. My husband and I took a few minutes to read over the menu. When he returned, my husband asked what was his favorite on the menu. Our server said the steak. Now hubby NEVER EVER orders steak from a restaurant. It's never as good as what we make at home but on a whim, he ordered it after the recommendation. Our appetizer was the charcuterie tray. Seriously the best combo of cheeses and the baba ganousch was amazing! When our entrees came out and hubby took the first bite of his steak, I thought he was going to melt into a puddle! In all my years married to him, I've watched that man devour very quickly everything he gets. He savored every bite and I even finished before he did! Proof will always be our go to restaurant when we get the rare chance to enjoy a kid less night out. We have been several times since that first time and have never been disappointed. Best place in Des Moines! Thank you Proof!
My first time at this restaurant was last weekend for the New Year's Eve 5 course dinner. Proof you have ruined one thing. Now that I know what good food is suppose to taste like, nothing compares now. That had to be one of the best meals I have ever eaten. It was so flavorful. We were there for two hours and did not feel rushed at all. Our server Jared was so patient, knowledgable, and a great conversationalist. We are not drinkers and he spent a bit of time with us figuring out the best drink and it did not disappoint. I would like to thank Proof for such a wonderful experience. You really showed my mother who came to Iowa to visit a really great time. We talked about it the rest of the night. I will be back.
We have had our eye on Proof for a while now.... high expectations we had were surpassed by the service, atmosphere, food and drinks. The Iowa ribeye was the very best that I have ever had. The char on the outside combined with the medium rare temp was absolutely perfect. The fried veggies, crisp green beans all the sauces that was magically drizzled along the side to dip. Heavenly!! The recommended cocktail was a wonderful drink to bring out all the flavors of each dish. We will definitely be back!
Hands down my favorite restaurant in Des Moines. Whether you are there for happy hour or a long dinner you will find delicious food that surprises you, stellar service, and delightful wine (even their house selections are good)! I cannot recommend the Second Saturday dinners enough they are so creative and your meal truly becomes your night's entertainment!
